Ciabatta from recipe "No Need to Knead"
I baked 2004
This recipe was made with a biga made the night before.
The glutinous crumb looks much better than the one above.

On 4-1-05, I made the same recipe the same way as above, as best I recall
Ciabatta from recipe "No Need to Knead"
Evidently the dough before baking was not flattened out as much,
and the crust was more like the Patricia Wells' recipe above.
