Sweet Potato Surprise Cake

Vegetable Oil
eggs separated
baking powder
sifted cake flour
cinnamon
graded raw sweet potatoes
sugar
hot water
chopped nuts
salt
nutmeg
vanilla

Grease pans Combine oil, Sugar beat until smooth.  Add egg yolks and beat well.  Add hot water, then dry ingredients which have been sifted together.  Stir in potato, nuts, vanilla beat well.  Beat egg whites until stiff, fold into mix.  Bake in 3 greased 8" cake pans 350 degrees 25-30 minutes cool and frost.
