Based on the information you have provided in your messages, your ancestor was Cantonese since he left from Macau. Fujian is quite far from there and highly unlikely a native of that province would make a long trek to Macau to board a ship for Peru.
Do you know if your ancestor died and buried in Peru (assume it is Lima)? If so, you are in luck and you should search out his grave and take a photo of his tombstone. It is very likely it would be inscribed with Chinese, which will provide you with all the answers to your questions.
