I had the pleasure and opportunity to visit Hoiping (Kaiping) just two months ago. My ancestors are also from Hoiping. A very good place to start getting information, is from:
The Hoiping dialect is almost the same as that of Toisan (Taishan) as they were part of the same region in former times (eg. Siyup district). There are, however, minor differences in pronunciation in words. It is the equivalent to the difference between American and British English). So, both Toisan and Hoiping dialects are mutually intelligible.
