According to your post your great-grandfather's complete name was Mark Sang, and your grandfather's surname was Mark, and so is yours. Everything is in order. In your ggf's name, the first name Mark is the surname according to Chinese convention. Sang was his personal name. So when your gf used Mark as the surname he was correct. As I do not know what the Chinese character looks like I can only guess that your Mark means "wheat". In Mandarin it is Mai and in Cantonese it is pretty close to Mark; some people spell it Mak.
