Fu Pan; Nam Chang from Amoy

My great grandfather was born in about 1824 and arrived in Australia in about 1850 from Amoy (this is listed as his birthplace on my grandfather's birth certificate).
His father was Fu Pan, his mother Nam Chang.
Until this year we had no idea of the Chinese ancestry as our family name was Davidson. The transition from a Chinese name to this European one took place sometime before marriage in 1864 in Ipswich, Queensland.
Does anyone have any ideas about discovering this man's Chinese name? My research had stopped at this point and I have no idea of which direction to take.
